is this foil backed and plasterboard faced?
Answer:
One side will be foil faced with the insulation board and then the other side attached will be plasterboard bonded.

Is this really suitable for direct bonding ('dot and dab')? A builder tells me that he's had problems sticking normal celeoxtex to walls with adhesive, and that it has fallen off overnight. Presumably the insulation side of this is like standard foil-backed celotex, and thus liable to detatch from the painted wall I want it affixed to?
Answer:
In order to facilitate a lasting bond you'd need to line the foil faced side of the board with an additional adhesive (something like PVA glue) along with the actual adhesive you'd use to line the wall, this will create a strong bond that ensures that it wont fall off after installation.

What I would use to stick it to a internal wall and will it help as a sound proofer?

With PIR board you are still reccomended to have an air gap to allow for ventilation and compression. Normally around 25mm if you can.

The foil layer in this product would act as an integral vapour control layer, and it's aim would be to help control the flow of moisture, to help stop the likes of moisture condensating and damp formingin the building structure.

Can this board be applied direct to existing plasterboard ceilings to improve insulation values?
Answer:
These boards can be applied directly to the ceiling, as long as the exisiting plasterboard is dry and in good condition. Make sure you buy the mechanical fixings long enough to penetrate through both the insulated plasterboard and the existing plasterboard and into the rafters/beams so you get a decent embedment depth.
